The very healthy kunnu aya is made from tiger nuts (aki Hausa in Igbo, aya in Hausa, and ofio in Yoruba). To spice it up, you can include dates, garlic or ginger, Yum! Here’s how to make it.
What you need:
- 7 cups Tiger Nuts
- 3 cups dry Dates
- 1 whole Coconut
- 3 teaspoons Vanilla Essence
Directions:
- Wash Tiger nuts to completely remove all dirt.
- Wash and deseed the dates.
- Break and carve out the coconut flesh.
- Grind Tigernut, dates and coconut with 3 60 cl bottles of water.
- Sieve first with a sieve that has large holes,then sieve again with a sieve tat has smaller holes
- To make the milk very fine and smooth, pass it through a muslin cloth.
- You can add pieces of chopped dates and roasted coconut flakes to the drink.
- Chill the drink and enjoy.
